Gluten Free Spiced Pancakes
My mom always made me the best pancakes so I knew I needed to develop a healthy option to keep them in my life. This is a fun recipe because you can do so much playing around by changing the spices and the fruits you serve it with. For example, in mango season I will spice the pancakes with nutmeg and garnish with fresh juicy mango! Be creative and enjoy the whole process.
INGREDIENTS
1 cup Paleo Flour
1 pasture raised egg
1/4 teaspoon baking powder
pinch of sea salt
½ cup nut milk or whole milk
½ teaspoon Reims or your favorite warm spice blend
unsalted, grass-fed butter or coconut oil for cooking
organic Berries and your favorite seeds or nuts for garnish
I love pumpkin seeds
Boiled Cider is my favorite syrup for drizzling
DIRECTIONS
In a small mixing bowl whisk all ingredients together.
Heat Scanpan with butter or coconut oil.
When hot, add batter and have fun flipping and cooking these delicious gems! Transfer to a plater.
Then I ALWAYS toss organic fresh or frozen berries and pumpkin seeds into the hot pan when my pancakes are finished cooking. Then garnish with warm berries and serve with Vermont Boiled Cider.
