Cucumber Tonic
I started making this in Mexico last year as a way to stay cool but what I found also was it ended up as my favorite way to drink my collagen powder (favorite brand). You can substitute celery too!
ingredients
1 ½ cucumbers, peeled and rough chopped
juice of 3 juicy limes
1 3-inch piece of ginger, peeled and chopped
8 mint leaves plus more for garnish
The best purified water you can find
pinch of your favorite sea salt
garnish with leftover ½ of cucumber
directions
Add your chopped cucumber, lime juice, ginger, mint, and pinch of sea salt to a blender.
Cover with water by two inches water.
Blend very well and strain through a medium-mesh strainer. Chill and when ready serve with cucumber and mint garnish.
