Cucumber Tonic

I started making this in Mexico last year as a way to stay cool but what I found also was it ended up as my favorite way to drink my collagen powder (favorite brand). You can substitute celery too!

ingredients

  • 1 ½ cucumbers, peeled and rough chopped

  • juice of 3 juicy limes

  • 1 3-inch piece of ginger, peeled and chopped

  • 8 mint leaves plus more for garnish

  • The best purified water you can find

  • pinch of your favorite sea salt

  • garnish with leftover ½ of cucumber

directions

  1. Add your chopped cucumber, lime juice, ginger, mint, and pinch of sea salt to a blender.

  2. Cover with water by two inches water.

  3. Blend very well and strain through a medium-mesh strainer. Chill and when ready serve with cucumber and mint garnish.
