Chocolate Energy Truffles

Believe it or not, this is what I ask my husband to make me every birthday. They are easy to make as everything goes into the food processor and then rolled into balls. If you prefer because of time you can always just roll them in cocoa powder instead of the melted chocolate. 

 
 

Ingredients

  1. Place all ingredients in the food processor except your 100% dark chocolate. Blend until everything is mixed well. Check your consistency by rolling one truffle and making sure it holds together. If not blend with a touch more almond butter or another date. Transfer to a medium bowl.

  2. Roll your preferred size truffles and place onto a parchment lined tray that will fit into your refrigerator. Once they are all rolled chill them while you melt your chocolate.

  3. Place chocolate in a a medium glass or stainless bowl that will fit on top of a small saucepan. Add 2 inches of water to your saucepan and bring to a boil then lower to a good simmer.

  4. Place chocolate into bowl and place on top of saucepan to melt. Gently stir until chocolate is melted.

  5. Remove truffles from the refrigerator and and roll one by one in the melted chocolate and place back on the parchment paper.

  6. Chill and enjoy.

Storage: Once chocolate is set you may freeze them for for up to 3 months or refrigerate for 3 weeks. I like to store them in a glass container with a lid in the freezer. So delicious!

*If possible purchase whole flaxseed and grind it in your coffee/spice ginger fresh each time you make this recipe.

Otherwise pre-ground flax meal will go rancid.

*I purchase whole dates and pit them myself. When I have purchased already pitted dates I find them to be dry and I

always feel the less machines touch my food the better.
