Hot Honey
Hot honey as been a staple ingredient in my kitchen for as long as I can rememberer. Most savory recipes are lifted by a touch of acid and sweet to balance. So by adding 1 teaspoon to a salad dressing or drizzling hot honey over roasted cauliflower with a squeeze of lemon makes the dish more memorable. Have fun with this ingredient!
ingredients
3 cups honey
2 serrano chile, sliced
12 thai chiles, lightly broken up
Directions
Bring both chiles and honey to a bare simmer in a small saucepan over medium-low heat.
Reduce heat to low and let cook 10 minutes. Taste honey, should be nicely hot but adjust to your liking by adding ½ cup more honey if it to hot.
Strain (optional) and transfer to a small jar. Keep in mind it needs to be hot to be a fun ingredient to cook with and enhance flavor.
Cover and chill.
